While France is the spiritual home of haute cuisine served in formal restaurants, some of the best meals found in Paris and Lyons are at neighborhood Bistros. Here the soul of French cuisine reaches its apogee. Simple cooking using the best and freshest ingredients, perfectly flavored and sauced, make Bistro dining experiences memorable, and no wines go better with classic Bistro food than Beaujolais.

Le Madeleine qualifies as a classic. It was voted as the best Bistro in New York, and is a recipient of the Wine Spectator's Award of Excellence. Chef Bruce Beaty, who trained at Jams and Le Bernardin, was named by the James Beard Foundation as a "Rising Star of America." The restaurant has been in business for 23 years and has earned a well-deserved reputation for quality and consistency. Our dinner was served in the lovely enclosed garden, an oasis of tranquility in the frenetic city.

No votes were taken for favorite wines as all were equally enjoyed. Notes were compiled by Ronald Kapon, Co-Director of Tasters Guild, NY. Prices are full New York city mark-up. Aperitif - Veuve du Vernay Brut, Blanc de Blancs- $8.99- Blend of Chenin Blanc & Chardonnay. Light, refreshing, crisp. Excellent value.

Louis Jadot Beaujolais 2001
$9.99- Youthful, fresh, perfect aperitif wine. Served slightly chilled.
George Duboeuf Beaujolais Villages 2001
$8.99- 39 communes are allowed to use this appelation. Good upfront fruit.
Joseph Drouhin Brouilly 2001
$13.99- Light and aromatic; fresh and fruity. Perfect match for the seared wild striped bass.
Chateau de Pizay Morgan 2001
$9.99- Full, robust and ageworthy, with lots of wild cherry fruit.
Mommessin Moulin a Vent "Reserve du Domaine Champ de Cour" 1999
$16.99- The King of Beaujolais. Perfect ending. Full-bodied, could be mistaken for a wine from the Cote D'Or. Rich, concentrated, strudy and well-balanced.
