We tasting 10 of the finest wines of 1990, 1995, 1996, and 1998 Bordeaux.
Prices are full markup retail price. We asked for one vote for favorite for Flight I, Flight II, and Flight III and IV. 1998 Pavie was the favorite for Flight I,1993 Lafon Roche was the favorite for Flight II,1998 Mouton Rothschild was the Favorite for Flight III and1996 Haut Brion was the favorite for Flight IV. The cheese was Monterey Jack by Cabot Cheese of Vermont. It was an amazing tasting of incredible wines. All the wines showed well.

Saint Emilion: 1998 Pavie
Ruby red color, Aroma of blueberry, blackberry, and hide and leather. The mouth feel is dense, rich, broad, with a very long finish. The Favorite of this flight.

Cherry red color. Violets, spicy notes with hints of earth and tobacco. Leather and tobacco with coffee, berries on the palate, balanced and a long finish.

Red color, nice fruit, tannin, drinking beautifully.

Very dark. Black currents, black mineral earthiness, lots of tannin, prunes, wood. Very long finish. The Favorite of this Flight.

1998 Mouton Rothschild
Very deep dark color, perfume, expresso, tobacco, blackberry, cassis and spice on nose. Rich, silky, opulent fruit on palate. Softening, lots of tannin, very long finish. The Favorite of this Flight.

Dark color, aromas of currents, spice. Full bodied, lots of tannin, long finish.

Cabernet Sauvignon, Merlot blend. Opaque, dense, purple color. Red current, cassis, tobacco, vanilla, minerals, fragrant on nose. Cranberry, red currant, tobacco, spice, on palate. Oak. Balanced. Very big. Opulent. Long finish. Delicious.

Flight IV: Graves Votes Full Retail Price $
1998 Haut Brion
Dark red color. Classic nose with dark red fruits, tobacco, tar and roasted cedar. Powerful on the palate with a rich, velvety texture and flavors that echo the nose. Intense, great balance and lots of acid and tannin which softens in the last few sips with great complex notes of roasted meats, gravel and tobacco. A great wine. Still young.

1996 Haut Brion
Grapes: 61% Merlot, 39% Cabernet Sauvignon, a touch of Cabernet Franc, Dark color. More rustic. Intoxicating aromas of tobacco, cedar, black fruits, and lead pencil; on the palate, black cherry, wood smoke, refined oak and mineral. Totally balanced, Delicious. The Favorite of this Flight.

Lighter red color. Intense nose of black cherries, forest floor, vegetal and slightly overripe fruit. Balanced palate with firm medium tannins and light fruits. Good length and balance.
